This is what tea time looks like on a Good Things retreat; tasty yet good for us treats and some sunshine in a tea cup.  We persuaded Hayley to reveal the secrets behind our good things afternoon tea ..

Hippy Crispy Treats

To make Hayley’s hippy crispy treats you will need:

  • Half cup maple syrup
  • Half cup Agave nectar
  • Half cup almond butter
  • Half cup dark chocolate
  • 2 Tablespoons coconut oil
  • 4 cups puffed rice (I use the Kallo unsweetened brand)
  • Quarter teaspoon of Sea Salt

For the topping:

  • 2 Tablespoons coconut oil
  • Half cup dark chocolate
  • Half cup of pumpkin, sesame, sunflower and shredded dried coconut mixed together
  • Quarter teaspoon of sea salt

To make:

Line a square pan (mine’s about 8 inches) with greaseproof paper.
In a large saucepan bring the syrups to a boil for about 1 min stirring frequently.
Remove from the heat and stir in nut butter, chocolate, coconut oil and the salt, until smooth.
Fold in the puffed rice and press evenly in to the pan with slightly damp fingers (Stops it sticking to you!)

In another small saucepan melt the other half cup of chocolate and coconut oil together until its melted, but only just, and pour over the top of the rice mix.  Then add your sprinkle and sea salt on the top.

Let the treats cool at room temp and then refrigerate for up to an hour, then cut in to squares.

They will  keep in the fridge for a couple of days. .. if you don’t eat them all first!
